The Hill Bar Bondi’s Latest Hot Spot

Things are heating up in Bondi this summer, as local hot spot The Hill Eatery launches its newest addition, The Hill Bar. The Hill Bar will be the exciting new kid on the 2026 block, serving up delicious food and drinks every night of the week.


With a Florida Keys inspired design, and a garden bar feel, its own locally crafted beer and expertly mixed cocktails, The Hill Bar is set to be the best new Bondi venue.

Launching last week with a fabulous opening, The Hill Bar boasts a prime location on the North Bondi hill. With its gorgeous water views, The Hill Bar is the ultimate place for after work drinks or a relaxed Sunday session.




Since 2012, The Hill Eatery owners, Charmaine O’Leary and Michael Benson have been serving the crowds of Bondi with great food and relaxed vibes. It has been their mission to bring together the local community by serving healthy, organic and ethically sourced food and drinks, a theme which carries through to The Hill Bar. Share plates like the fresh and tangy sugar cured kingfish tiradito perfected with ruby grapefruit and jalapeño ($19) bring local and sustainable sourced produce together for the expertly balanced yet relaxed taste that The Hill Eatery is known for.





The menu is full of unique twists with rum based cocktails a mainstay; bringing the tastes of the Florida Keys, Bermuda and Cuba together in one-of-a-kind, refreshingly different combinations. The Cargo Chai ($18) works rum with iced chai tea for an exceptionally invigorating cocktail. Rum even finds its way into delectable slow cooked pork in one of The Hill Bar’s milk bun burgers ($17.50). Organic and biodynamic Australian wines accompany local craft beers and ciders for a boutique drinks menu which covers all the bases for the relaxed coastal venue. Cocktails are anything but the usual with exciting mixes like the Mayan Mule ($17), combining ginger beer and tequila.




Happy Hour is every day from 3-6pm with The Hill’s own local craft Kolsch beer, apple cider and wines for just $6 to end the day basking in the westerly sun. Sure to be a local favourite with retro-feel bespoke wallpaper, splashes of flamingo pink and palms and vines in abundance, The Hill Bar is a relaxed scene to catch up with friends, unwind and be transported to the exotic Florida Keys, one sip at a time.
