I was honoured to attend the launch dinner for Schild Estate’s Prӓmie Limited Release 2013 vintage Shiraz, which was held at Foveaux St Dining in Surry Hills…
The evening was an introduction to the Family owned Schild Estate and through the family owners and Passionate wine maker Scott Hazeldine, we got a glimpse of the passion and love that went into making this delicate Shiraz with hints of fruit that danced across my mouth. The food designed by Chef Darrell Felstead matched the different wines brilliantly, delighting our senses with unusual combinations and textures reiterating the how delightful Schild Estate Wines are.

Schild Estate wines are created with authenticity and passion. From real earth in the Southern Barossa by generations of a family who have made that place their home.
Each vintage, certain parcels emerge as the stars. Whilst there are of course proven performers year on year, it is by no means always the same blocks that respond to the different vintage conditions and emerge on top. As such, it can be a lovely surprise to see which wines shine from the depths of the barrel cellar as our favourites.
This wine came about by a desire from our winemaking team to showcase the most exciting parcels of the year in an individual wine designed to reflect the best of that particular vintage.
Winemaker’s Notes
2013 saw warm and dry conditions throughout most of growing season, but without any significant periods of severe heat. Yields were low and many red varieties ripened evenly, with great flavor, depth and some firm prominent tannins which have softened well during maturation. As a result, many of the wines from the year show great structure and framing when young and look to have the ability to genuinely age well too.
Colour: Deep, dark ruby
Bouquet: Full, soft and layered with aromas of vibrant blackberries and blood plum fruit. These are coupled with secondary more subtle hints of cedar wood, fresh vanilla bean, pan forte and clove spice.
Palate: Intenseprimaryfreshplumflavoursshowagainonthe palate, where they hold their presence all the way through to roll out soft and “pillowy” at the finish. A firmly present, but fine tannin framework provides just enough focus and lift for the fruit to ensure added complexity, but retaining vibrancy to the mouth flavours of this wine.
