Mordeo Bistro & Bar held an exclusive G.H.MUMM champagne tasting and five course degustation dinner on Tuesday 16th September. The event was an intimate affair hosted by Chris Sheehy, Champagne ambassador for G.H.MUMM, who guided guests through a tasting list of champagnes expertly matched with each dish.
Chris has spent years developing his palate locally and abroad, and has recently served as a judge on a number of panels and tasting teams including, Drinks Trade, The Gold Book and Onwine. He has also been involved with publications such as Gourmet Traveller, Gourmet Traveller Wine, Sydney Morning Herald, CEO Magazine and Delicious. Chris has now joined the team at Pernod Ricard Australia as the official Brand Ambassador for G.H.MUMM.
The five courses and matching champagnes were as follows:
1st Course:
White Bait croquetas with a cauliflower mayonnaise
G.H.MUMM Cordon Rouge
Tomato consommé, with broad beans, basil
2nd Course:
Octopus Carpaccio, lamb tongue lettuce, air dried tuna, citrus salad

3rd Course:
Grilled barramundi fillet, zucchini flowers filled with lemon thyme, ricotta cheese, grilled asparagus and a champagne foam

4th Course:
Milk fed veal loinwith celeriac puree, honey chestnuts, truffle oil
