I was born and brought in Fiji but it had being twenty one years since I last visited, so on my way back to fly out from Nadi back to Sydney I stayed the night at the Hilton Fiji Beach Resort as a title treat before laving and I had the most wonderful time thanks to Irene Edwards and the lovely folk at the Resort.
Arrival at the Hilton was like coming home and the welcome like a big hug, check in was easy and the location of reception and layout made the whole experience flow naturally.
The walk to the room was made easier with the help of a porter who gave the me the lowdown on the hotel layout, where to go for a drink or grab a bite and where the best spot for a dip was which was super helpful. Despite the Hilton’s age it’s beautifully kept and the waterfront room gave me a front row seat to the amazing Fijian sunsets and sunrises.
After a little rest it was time to catch the stunning Fiji sunset with a cocktail on the beach at NUKU, and I was glad to have the company of Irene Edwards the Hilton’s marketing manager to show me around.

The cocktails were delicious and I got to learn a bit more about the hotel and capture the sunset, before we headed to KORO for dinner which was delightfully an adults only restaurant and headed by an Australian chef.

The food was delightful with a slant towards middle eastern cuisine, nothing I hadn’t already tried before and missing from the menu was the beautiful local produce that isn’t found anywhere around the world. The stand out dish for me was a gluten free dessert, it was light, fresh and packed with citrus flavours and absolutely delightful.
The staff were absolutely delightful and naturally made you feel at ease, for those with kids the programmes and daycare centre will have you relaxing by the pool without a care in the world ( till 5pm when your kids come looking fore you lol ). I can’t wait to visit again and this time hopefully stay a little longer and explore more of the Hilton Fiji Beach Resort’s delightful tropical hospitality and offerings.
My Fave Bit
The Waterfront location but most of all the warm, inviting and friendly service. It most definitely felt like home, and its what I look for on holiday I want to feel instantly at ease and relaxed and at the Hilton Fiji Beach Resort I most certainly did. Perhaps see you in Fiji at Christmas or to ring in the New Year.
