Sydney palates are in for a new zing as Fat Angel launches, bringing boutique spirits and unique flavours to the Surry Hills dining scene.
Fat Angel has a purists approach to the cocktail craft using high quality liquor from boutique distributors to create its range of signatures and infuse a fresh twist to the old classics.
Owner Randy Kakos takes joy in hunting out distributors that offer a unique flavours compared to what’s available mainstream.
“As soon as I give locals a whiff of the Carvo Caramel Vodka that features in our Passion Delight, they want more. This ‘wow’ experience keeps our guests coming back to try different cocktails and is what the area has been crying out for,” he said.
This attitude extends to the food. Designed by ex Food Society head chef Fernando Sanchez, the menu focuses on the produce bringing an unconventional twist to old favourites. The Fat Angel burger, for example, features a fresh toasted Turkish bun, exclusive to the venue, and the polenta chips offer a pleasing creamy centre of parmesan and rosemary.
Hospitality runs in the Kakos blood with Randy following in the footsteps of brothers Lorant and Lorence who own Lorento Pizzeria next door and Old Castile in Bondi respectively. It’s this family insight and experience that Kakos believes has helped him deliver a great customer experience from launch.
The décor sits somewhere between a New York warehouse and winery cellar door with exposed brick, brass and polished wood finishes bringing a sense of instant comfort to the space.
“For me it’s about making people feel instantly at ease. Even it’s a first Tinder date, the space, the friendliness of the service, the food, and of course the cocktails, should get the conversation flowing. That’s my litmus test anyway,” Kakos added.
