The TILBURY Gets A Refreshing New Look

Woolloomooloo’s favourite local watering hole, The Tilbury Hotel, has just launched a fresh, modernising makeover – the first one in 12 years!

Teaming up with the talented interior designers Luchetti Krelle (http://www.luchettikrelle.com – Acme, Hotel Centennial, Woolwich Pier Hotel, etc), has seen The Tilbury undergo a series a changes, including new lighting and furniture, mixed with a splash of soft pastels and gold brass backgrounds for the interior, giving the venue a contemporary edge. Whilst the new outdoor courtyard seating, iron bar structure and bold, bright backdrop offers a fun, yet relaxed ambience.

The Whitehouse family, third-generation publicans, have owned The Tilbury Hotel for over 16 successful years and although the venue will be renewed, they promise to keep the cherished characteristics intact.

“We wanted to give people a more relaxed experience when visiting the hotel, both in the restaurant and bars, without jeopardising the already simple classic style The Tilbury possesses” says Scott Whitehouse, General Manager of Whitehouse Properties. “I think after these refurbishments, we will have successfully achieved that”

Head Chef James Wallis took the reins of The Tilbury Hotel kitchen in May 2015 and has since had a strong impact on the dining offering. As the hotel undergoes an exciting new look, the menu has also been completely redefined to reflect this, including a new Summer Grill Menu and Wine List. With James Wallis’ background winning Gordon Ramsay’s Best British Restaurant in the TV show ‘Ramsay’s Best Restaurants’, winning 2AA Rosettes and recognition in the UK Michelin Guide, his focus is seasonal, quality Australian ingredients cooked with skill whilst allowing the produce to shine through.

The renovations of the long-standing hotel, in conjunction with the new menu will certainly entice the new crowds, while satisfying the loyal customers.
